  • Look for freshness: The fish should look and smell fresh, with clear eyes, shiny skin, and a mild scent. Avoid buying fish that has a strong, fishy odor or cloudy eyes, as this can indicate spoilage.
  • Check the skin: The skin of the fish should be firm, moist, and elastic. If the skin is dull and dry, this may be a sign that the fish is not fresh.
  • Touch the fish: Gently press the fish with your finger. If it springs back, it is a good sign that the fish is fresh. If the flesh stays indented, this may indicate that the fish is past its prime.
  • Ask the fishmonger: If you are unsure about the quality of the fish, don’t be afraid to ask the fishmonger for their opinion. They should be able to answer any questions you have about the freshness and quality of the fish.
  • Check for sustainability: Choose fish that has been sustainably sourced and certified by organizations such as the Marine Stewardship Council (MSC) or the Aquaculture Stewardship Council (ASC).
